  • 2 cups shredded cooked chicken (about 10 oz / 280 g), rotisserie chicken recommended
  • 8 oz cream cheese, softened to room temperature
  • 1/2 cup buffalo hot sauce (120 ml), such as Frank’s RedHot
  • 1/4 cup blue cheese crumbles (30 g), plus extra for topping
  • 1/2 cup sour cream (120 ml)
  • 1 cup shredded sharp cheddar cheese (100 g)
  • 1 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • Salt and freshly ground black pepper, to taste
  • Optional: chopped green onions or chives for garnish

Instructions

  1. Preheat your oven to 350°F (175°C) and lightly grease your baking dish.
  2. Beat the cream cheese in a mixing bowl until smooth and creamy, about 2-3 minutes with an electric mixer.
  3. Add sour cream and buffalo hot sauce to the cream cheese and mix well until fully combined.
  4. Stir in shredded chicken, shredded cheddar cheese, garlic powder, onion powder, salt, and pepper. Fold gently but thoroughly.
  5. Transfer the mixture to the prepared baking dish and smooth the top with a spatula.
  6. Sprinkle blue cheese crumbles evenly over the top.
  7. Bake uncovered for 20-25 minutes, until edges bubble and top is lightly golden.
  8. Remove from oven and let rest for about 5 minutes before serving.

Notes

Softening cream cheese is crucial to avoid lumps. Use rotisserie chicken for convenience. Sprinkle blue cheese on top rather than mixing in for bursts of flavor. For a crusty top, broil for last 2 minutes watching closely. Add extra sour cream if chicken is dry. Can be made ahead and baked fresh.
