A quick and easy game day dip combining creamy blue cheese, spicy buffalo sauce, and shredded chicken for a bold, crowd-pleasing snack.

  • 2 cups cooked shredded chicken (about 10 oz / 280 g), rotisserie chicken works great
  • 8 oz (225 g) cream cheese, softened
  • 4 oz (115 g) blue cheese crumbles (Maytag or Roquefort preferred)
  • 1/2 cup (120 ml) buffalo wing sauce (e.g., Frank’s RedHot)
  • 1/2 cup (120 ml) sour cream
  • 1 cup (100 g) shredded mozzarella or cheddar cheese
  • 1 tsp minced garlic
  • 2 green onions, thinly sliced (optional garnish)
  • Black pepper to taste

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, combine softened cream cheese, sour cream, and minced garlic. Stir until smooth and creamy.
  3. Pour in buffalo wing sauce and mix until the color is consistent.
  4. Fold in cooked shredded chicken, ensuring it is coated with the sauce mixture.
  5. Gently fold in blue cheese crumbles, keeping some chunks for texture.
  6. Spread the mixture evenly in an 8×8-inch (20×20 cm) baking dish.
  7. Sprinkle shredded mozzarella or cheddar cheese evenly over the top.
  8. Bake for 20–25 minutes or until the cheese is melted, bubbling, and golden on top.
  9. Remove from oven and let rest for 5 minutes.
  10. Garnish with sliced green onions and extra blue cheese crumbles if desired.
  11. Serve warm with celery sticks, tortilla chips, carrot slices, pita wedges, or toasted baguette slices.

Notes

If the dip seems too thick before baking, stir in a tablespoon of milk or chicken broth to loosen it. Watch baking time closely to avoid drying out; cover loosely with foil if cheese browns too fast. Room temperature cream cheese blends more smoothly. Can be made ahead and refrigerated before baking. Slow cooker method: cook on low for 1-2 hours, stirring occasionally.
