  • 3 garlic cloves, minced

  • 4 cups low-sodium chicken broth
  • 1 cup heavy cream
  • 1 package (16 ounces) potato gnocchi
  • 1/2 cup freshly grated Parmesan cheese
  • 1 teaspoon Italian seasoning
  • 1/4 teaspoon crushed red pepper flakes (optional)
  • Salt and black pepper to taste
  • Fresh basil or parsley for garnish (optional)

Instructions

  1. Heat olive oil in a large skillet over medium heat. Add Italian sausage, breaking it apart with a wooden spoon. Cook 7-8 minutes until browned and cooked through. Drain excess fat if needed.
  2. Add diced onion and minced garlic to the skillet. Cook 4-5 minutes until softened and fragrant, stirring occasionally.
  3. Stir in chopped sun-dried tomatoes and cook for 2 minutes.
  4. Transfer the sausage mixture to the slow cooker. Pour in chicken broth and stir to combine.
  5. Sprinkle Italian seasoning and crushed red pepper flakes over the mixture. Season lightly with salt and black pepper.
  6. Cover and cook on low for 4 hours (or high for 2 hours if short on time).
  7. After 4 hours, stir in heavy cream and potato gnocchi. Cover and cook on low for another 30 minutes until gnocchi are tender but not mushy.
  8. Stir in grated Parmesan cheese and adjust seasoning with salt and pepper as needed.
  9. Ladle soup into bowls and garnish with fresh basil or parsley if desired. Serve hot.

Notes

Brown the sausage first to build flavor. Add gnocchi in the last 30 minutes to avoid mushiness. Use low-sodium broth to control saltiness. Stir halfway through cooking if possible.
