Cozy Sheet Pan Garlic Butter Steak Bites with Potatoes and Green Beans

A quick and easy one-pan dinner featuring tender steak bites, crispy potatoes, and fresh green beans all roasted together with a rich garlic butter sauce. Perfect for cozy weeknight meals with minimal cleanup.

  • 1 pound sirloin or ribeye steak, cut into 1-inch cubes
  • 12 ounces baby potatoes, halved (Yukon Gold or red potatoes)
  • 8 ounces fresh green beans, trimmed
  • 4 cloves garlic, minced
  • 4 tablespoons unsalted butter, softened
  • 2 tablespoons olive oil
  • 1 tablespoon fresh thyme, chopped
  • Salt and freshly cracked black pepper, to taste
  • Optional: fresh lemon juice, for serving

Instructions

  1. Preheat the oven to 425°F (220°C) and line a sheet pan with parchment paper or a silicone mat.
  2. Cut the steak into 1-inch cubes and pat dry with paper towels.
  3. Toss the steak cubes with 1 tablespoon olive oil, salt, and pepper in a mixing bowl. Set aside.
  4. Halve the baby potatoes and toss with 1 tablespoon olive oil, salt, pepper, and half the minced garlic (2 cloves). Spread on one side of the sheet pan.
  5. Trim the green beans and toss with a pinch of salt, pepper, and the remaining minced garlic. Set aside.
  6. Spread the seasoned steak cubes on the other side of the sheet pan with the potatoes.
  7. Roast the steak and potatoes for 15 minutes.
  8. Add the green beans to the sheet pan, stir the potatoes and steak gently with tongs to turn them.
  9. Continue roasting for another 10–12 minutes until steak is browned and cooked to liking, potatoes are fork-tender with crispy edges, and green beans are bright and slightly charred.
  10. While roasting, melt the butter in a small saucepan over low heat. Stir in chopped thyme and remaining minced garlic. Cook gently for 1-2 minutes until fragrant but not browned.
  11. Drizzle the garlic butter sauce over the steak bites, potatoes, and green beans. Toss gently to coat.
  12. Add a squeeze of fresh lemon juice if desired and serve hot.

Notes

Pat steak dry before seasoning to ensure a good sear. Add green beans later in roasting to keep them crisp-tender. Use a meat thermometer to check doneness (135°F for medium-rare, 145°F for medium). Avoid overcrowding the pan to prevent steaming. For dairy-free, substitute butter with vegan margarine or olive oil. Leftovers reheat best in a skillet or under a broiler to maintain texture.
