  • 1 can cinnamon rolls (pre-made or homemade)
  • 8 slices thick-cut bacon
  • 1/2 cup pure maple syrup
  • 3 tablespoons bourbon
  • 4 tablespoons unsalted butter, melted
  • 1/4 cup packed brown sugar
  • 1 teaspoon cinnamon
  • 1 teaspoon vanilla extract
  • 1 cup powdered sugar
  • 23 tablespoons milk or cream
  • Optional: 1/4 cup chopped pecans or walnuts
  • Optional: pinch of sea salt flakes

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Cook the bacon in a cold skillet over medium heat until crispy but not burnt, about 8-10 minutes. Drain on paper towels and chop into bite-sized pieces. Save a tablespoon of bacon fat if desired.
  3. In a medium bowl, whisk together melted butter, maple syrup, bourbon, brown sugar, cinnamon, and vanilla extract until smooth to make the glaze.
  4. Grease a 9×13-inch baking dish lightly with butter or non-stick spray. Place the cinnamon rolls evenly in the dish, spacing them slightly apart.
  5. Pour the glaze evenly over the cinnamon rolls, making sure it seeps into all the nooks.
  6. Sprinkle the crumbled bacon over the top of the rolls.
  7. Bake for 30-35 minutes until the rolls are golden brown and the glaze is bubbling around the edges. Tent with foil if tops brown too quickly.
  8. While baking, whisk powdered sugar with milk or cream until smooth and pourable to make the finishing glaze. Adjust thickness as needed.
  9. Once out of the oven, drizzle the powdered sugar glaze generously over the warm cinnamon roll bake. Sprinkle a pinch of sea salt or chopped nuts if desired.
  10. Let the bake cool for 10 minutes to allow flavors to meld and glaze to set slightly.
  11. Serve warm in generous slices.

Notes

Do not overcook bacon to avoid bitterness. Use quality cinnamon rolls for best texture. Whisk glaze thoroughly to prevent separation. Tent with foil if rolls brown too fast. Brush extra melted butter or reserved bacon fat on rolls before baking if they seem dry. For kids, omit bourbon and increase vanilla and maple syrup. Leftovers can be refrigerated for up to 3 days or frozen for up to a month. Reheat gently in oven to maintain texture.
