A warm and comforting apple crisp featuring a crispy brown sugar oat topping and tender, balanced apple filling. Perfect for fall and winter, this easy dessert combines tart and sweet apples with cozy spices.

Ingredients

Scale
  • 6 cups apples, peeled and sliced (preferably a mix of Granny Smith and Honeycrisp)
  • 1/4 cup granulated sugar
  • 1 1/2 teaspoons ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1 teaspoon vanilla extract
  • 1 tablespoon lemon juice
  • 1 1/2 cups old-fashioned rolled oats
  • 3/4 cup packed brown sugar (preferably dark brown sugar)
  • 3/4 cup all-purpose flour
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, cold and cubed

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Peel, core, and slice about 6 cups of apples into roughly 1/4-inch thick slices.
  3. In a large bowl, toss the apple slices with 1/4 cup granulated sugar, 1 1/2 teaspoons cinnamon, 1/4 teaspoon nutmeg, 1 tablespoon lemon juice, and 1 teaspoon vanilla extract until evenly coated.
  4. Transfer the apple mixture to a 9×13 inch baking dish and spread evenly.
  5. In a separate mixing bowl, combine 1 1/2 cups rolled oats, 3/4 cup packed brown sugar, 3/4 cup all-purpose flour, and 1/4 teaspoon salt.
  6. Add the cold, cubed 1/2 cup unsalted butter to the oat mixture. Use a pastry cutter, fork, or fingertips to cut the butter into the dry ingredients until the mixture resembles coarse crumbs with some pea-sized pieces.
  7. Sprinkle the oat topping evenly over the apples without pressing it down.
  8. Bake in the preheated oven for 40-45 minutes until the topping is golden brown and the apple filling is bubbling around the edges.
  9. Let cool slightly before serving to allow the juices to settle.

Notes

Use cold butter to achieve a crumbly topping. If topping browns too fast, tent with foil halfway through baking. Apples can be swapped with peaches or pears for seasonal variations. For gluten-free, substitute all-purpose flour with almond or gluten-free flour. For dairy-free, replace butter with coconut oil or dairy-free margarine. Serve warm with vanilla ice cream or whipped cream for extra indulgence.
