Instructions

  1. Pit and halve about 1 cup of fresh Bing cherries. If using frozen cherries, thaw and drain excess liquid.
  2. Juice 2 large limes until you have about 3 tablespoons of juice. Add lime juice and 1/2 teaspoon vanilla extract to the cherries in a blender or food processor.
  3. Blend the mixture until smooth and vibrant with no large chunks. Stop and scrape down the sides if needed.
  4. Optional: Strain the puree through a fine mesh sieve into a pitcher for a smoother texture, pressing gently to extract all juice and flavor.
  5. Stir in 1/4 cup simple syrup. Taste and adjust sweetness if needed.
  6. Slowly pour in 3 cups chilled sparkling water, stirring gently to combine without losing fizz.
  7. Fill glasses with crushed ice, pour the spritzer over the ice, and garnish with lime slices and fresh mint leaves if desired.
