  • 2 large yellow onions, thinly sliced

  • Salt and freshly ground black pepper to taste
  • 68 French rolls or baguettes, sliced horizontally
  • 2 tablespoons butter, softened
  • 2 teaspoons fresh thyme or rosemary, chopped (optional)

Instructions

  1. Pat the chuck roast dry with paper towels and season generously with salt and freshly ground black pepper on all sides. Let rest at room temperature for 15 minutes.
  2. Heat 2 tablespoons of oil in a Dutch oven or skillet over medium-high heat. Sear the beef roast on all sides until a deep brown crust forms, about 4-5 minutes per side.
  3. Remove the beef and set aside. Reduce heat to medium and add the sliced onions to the pot. Cook, stirring occasionally, until softened and golden brown, about 10 minutes. Add minced garlic and cook for another minute until fragrant.
  4. Pour in 4 cups beef broth, 2 tablespoons Worcestershire sauce, and fresh thyme or rosemary if using. Stir to combine. Return the beef to the pot, nestling it into the broth and onions.
  5. Cover and simmer gently on the stove over low heat for 2.5 to 3 hours, or until the beef is fork-tender. Alternatively, transfer to a slow cooker and cook on low for 6-7 hours.
  6. Transfer the beef to a cutting board and let rest for 10 minutes. Slice thinly against the grain. Keep the au jus warm.
  7. Spread softened butter on the French rolls or baguettes. Toast in a hot skillet or under the broiler until golden and crisp, about 2-3 minutes per side.
  8. Assemble sandwiches by piling sliced beef onto toasted bread and spooning caramelized onions over the top. Serve immediately with warm au jus for dipping.

Notes

Let the beef rest before slicing to retain juices. Toast bread just before assembling to prevent sogginess. If au jus is too thin, simmer uncovered to concentrate flavors. For deeper flavor, add a splash of red wine to broth while cooking. Use gluten-free rolls and broth for gluten-free version. Dairy-free butter alternatives can be used for toasting.
