  • 1 cup (6 oz or 170g) semi-sweet chocolate chips
  • 1 1/2 cups (300g) granulated sugar
  • 1/2 cup (packed, 100g) brown sugar
  • 3 large eggs, room temperature
  • 2 teaspoons pure vanilla extract
  • 1 cup (125g) all-purpose flour
  • 3/4 cup (unsweetened, 75g) cocoa powder
  • 1/2 teaspoon salt
  • 1/2 cup (3 oz or 85g) chocolate chunks or baking chocolate, roughly chopped

Instructions

  1. Preheat your oven to 350°F (175°C). Line an 8×8 inch (20×20 cm) square baking pan with parchment paper, leaving some overhang for easy removal.
  2. Melt the butter and semi-sweet chocolate chips together in a microwave-safe bowl in 30-second intervals, stirring between, until smooth and glossy (about 2-3 minutes).
  3. In a large bowl, whisk together the granulated sugar, brown sugar, and eggs until well combined and slightly thickened, about 2 minutes by hand or 1 minute with a mixer.
  4. Add the vanilla extract and the melted chocolate and butter mixture to the sugar and eggs. Stir gently until fully combined.
  5. Sift together the all-purpose flour, cocoa powder, and salt. Gradually fold these dry ingredients into the wet mixture using a rubber spatula, stopping when no streaks of flour remain.
  6. Fold in half of the chopped chocolate chunks into the batter.
  7. Pour the batter evenly into the prepared pan. Drop spoonfuls of the remaining chopped chocolate on top and swirl them into the batter with a knife or skewer to create gooey chocolate swirls.
  8. Bake in the preheated oven for 25-30 minutes. Check doneness by inserting a toothpick near the center; it should come out with a few moist crumbs but not wet batter.
  9. Cool the brownies completely in the pan on a wire rack for at least 1 hour before slicing.
  10. Use the parchment overhang to lift the brownies out of the pan. Cut into 12 squares and serve.
