  • 2 large eggs, room temperature

Instructions

  1. Activate the yeast: Warm the milk to about 110°F (43°C). Stir in the sugar and sprinkle yeast over the top. Let it sit until foamy and bubbly, about 5-10 minutes.
  2. Mix wet ingredients: In a large bowl or mixer, whisk together the eggs and melted butter. Add the bubbly yeast mixture.
  3. Add dry ingredients: Gradually mix in the flour and salt. Use a stand mixer with dough hook on low speed until combined into a shaggy dough.
  4. Knead the dough: Knead by hand on a floured surface or with mixer on medium speed until smooth, elastic, and slightly tacky but not sticky, about 8-10 minutes.
  5. First rise: Shape dough into a ball, place in a greased bowl, cover with damp towel or plastic wrap, and let rise in a warm spot until doubled in size, about 1 to 1.5 hours.
  6. Shape the rolls: Punch down dough, divide into 12 equal pieces (~2.5 ounces or 70g each). Shape each into a smooth ball and place snugly in a greased 9×13-inch baking pan.
  7. Second rise: Cover and let rolls rise until puffy and nearly doubled, about 45 minutes.
  8. Bake: Preheat oven to 375°F (190°C). Bake rolls on middle rack for 20-25 minutes until golden brown.
  9. Butter finish: Immediately brush rolls with melted butter after baking. Let cool for 10 minutes before serving.

Notes

If rolls brown too fast, tent with foil halfway through baking. Use an instant-read thermometer to check internal temperature (about 190°F/88°C). Don’t rush rising times for best softness. For dairy-free, substitute butter with coconut oil and milk with almond or oat milk. For gluten-free, experiment with almond or oat flour in small batches.
