Ingredients

Scale
  • 1.5 pounds sirloin or chuck steak, cut into 1-inch pieces
  • Salt and pepper, to taste
  • 2 tablespoons olive oil or vegetable oil
  • 2 tablespoons unsalted butter
  • 1 medium white or yellow onion, finely chopped
  • 8 ounces cremini or button mushrooms, sliced
  • 2 cloves garlic, minced
  • 2 tablespoons all-purpose flour (can substitute with gluten-free flour)
  • 2 cups beef broth (low sodium preferred)
  • ½ cup heavy cream (can substitute with coconut cream for dairy-free)
  • 1 teaspoon Worcestershire sauce
  • 1 teaspoon fresh or dried thyme (optional)
  • Fresh parsley, for garnish

Instructions

  1. Pat 1.5 pounds of beef tips dry with paper towels and season generously with salt and pepper. (10 minutes)
  2. Heat a large skillet over medium-high heat and add 2 tablespoons olive oil. Heat until shimmering but not smoking. (3 minutes)
  3. Add beef tips in a single layer without overcrowding. Sear for 2-3 minutes per side until browned but not cooked through. Remove beef and set aside. (6 minutes)
  4. Lower heat to medium and add 2 tablespoons butter. Once melted, add chopped onion and cook until translucent, about 3-4 minutes. Add sliced mushrooms and sauté until golden and moisture evaporates, about 5-6 minutes. (10 minutes)
  5. Stir in minced garlic and cook for 30 seconds until fragrant. Sprinkle 2 tablespoons flour over mushroom mixture and stir to coat, cooking for 1-2 minutes to remove raw flour taste. (3 minutes)
  6. Slowly whisk in 2 cups beef broth, scraping browned bits from the pan. Add Worcestershire sauce and thyme. Bring to a gentle simmer and cook until gravy thickens, about 5 minutes. (7 minutes)
  7. Stir in ½ cup heavy cream and return beef tips to the pan. Simmer gently for 3-5 minutes until beef is cooked through and tender. Adjust seasoning with salt and pepper. (8 minutes)
  8. Garnish with freshly chopped parsley and serve hot over mashed potatoes, egg noodles, or rice. (2 minutes)

Notes

Patting the beef dry before searing is crucial for a good crust. Work in batches to avoid overcrowding the pan. If gravy is too thick, add more beef broth; if too thin, simmer longer. Use fresh thyme for best flavor. Let dish rest a few minutes before serving. For gluten-free, substitute flour with cornstarch or arrowroot powder. For dairy-free, use coconut cream and olive oil instead of butter.
