Ingredients

Scale
  • 1 pound ground beef (85% lean recommended)
  • 1 medium yellow onion, chopped (about 1 cup)
  • 2 cloves garlic, minced
  • 1 cup carrots, diced
  • 1 cup frozen peas (or corn or green beans)
  • 1 can (10.5 oz) condensed cream of mushroom soup (or cream of chicken)
  • 1/2 cup milk (whole or 2%)
  • 1 teaspoon Worcestershire sauce
  • 1/2 teaspoon dried thyme (optional)
  • Salt and freshly ground black pepper, to taste
  • 1 bag (32 oz) frozen tater tots
  • 1 1/2 cups shredded cheddar cheese
  • 2 tablespoons chopped fresh parsley (optional garnish)
  • Chopped green onions (optional garnish)

Instructions

  1. Preheat oven to 375Β°F (190Β°C).
  2. Heat a large skillet over medium-high heat. Add ground beef and chopped onion. Cook for 6-8 minutes, breaking up beef, until browned and onions are soft. Drain excess fat if needed.
  3. Stir in minced garlic, diced carrots, and frozen peas. Cook for another 3-4 minutes until carrots soften and peas thaw.
  4. Reduce heat to low. Add condensed soup, milk, Worcestershire sauce, dried thyme, salt, and pepper. Stir until well combined and creamy, about 2 minutes. Taste and adjust seasoning.
  5. Transfer beef and veggie mixture into a greased 9×13-inch baking dish. Spread evenly.
  6. Arrange frozen tater tots in neat rows over the filling.
  7. Bake for 35-40 minutes, until tater tots are golden brown and crispy.
  8. Sprinkle shredded cheddar cheese over the tots and bake for an additional 5-8 minutes, until cheese melts and bubbles.
  9. Let casserole rest for 5 minutes before serving. Garnish with fresh parsley or green onions if desired.

Notes

For gluten-free, use gluten-free condensed soup and check your tater tot brand. You can substitute ground turkey or chicken for beef, and swap veggies as desired. Prep ahead by assembling the filling and refrigerating, then add tots and bake when ready. For crispier tots, increase oven temperature to 400Β°F for the last 5 minutes. Let casserole rest before serving for best texture.
