  • 1 lb ground beef (80/20 preferred)
  • 1/2 lb ground pork
  • 1/2 cup breadcrumbs (plain or panko)
  • 1/4 cup whole milk
  • 1 small onion, finely chopped
  • 1 large egg, room temperature
  • 1/2 tsp ground allspice
  • 1/2 tsp ground nutmeg
  • Salt and freshly ground black pepper, to taste
  • 2 tbsp unsalted butter
  • 2 tbsp all-purpose flour
  • 2 cups beef broth
  • 1 cup heavy cream or sour cream
  • 1 tsp Worcestershire sauce
  • Salt and pepper, to taste

Instructions

  1. In a large bowl, combine breadcrumbs and milk. Let soak for about 5 minutes until breadcrumbs are soft.
  2. Add ground beef, ground pork, chopped onion, egg, allspice, nutmeg, salt, and pepper to the breadcrumb mixture. Mix gently but thoroughly.
  3. Shape mixture into golf-ball-sized meatballs, about 1 to 1.5 inches in diameter.
  4. Heat 2 tablespoons butter in a large skillet over medium heat. Brown meatballs in batches for 5-7 minutes, turning occasionally. Remove and set aside.
  5. Reduce heat to medium-low. Add remaining butter to skillet. Sprinkle flour over butter and stir constantly to form a roux. Cook 1-2 minutes until golden and nutty.
  6. Slowly whisk in beef broth, ensuring no lumps form. Simmer for 3-4 minutes until slightly thickened.
  7. Stir in heavy cream and Worcestershire sauce. Season with salt and pepper. Simmer 2-3 minutes until sauce is smooth.
  8. Return meatballs to skillet, spoon sauce over them. Cover and simmer on low heat for 10-15 minutes until meatballs are cooked through.
  9. Adjust seasoning if needed. Serve hot with mashed potatoes, egg noodles, or crusty bread.

Notes

Soak breadcrumbs in milk to keep meatballs tender. Brown meatballs in batches to avoid steaming. Whisk sauce constantly to prevent lumps. If sauce thickens too much, add broth or cream to loosen. Meatballs can be prepared ahead and refrigerated or frozen separately from sauce.
