  • 2 tbsp baking soda (for boiling)
  • 1 egg beaten with 1 tbsp water (egg wash)

Instructions

  1. Activate the yeast: In a small bowl, combine warm water, sugar, and active dry yeast. Stir gently and let sit for 5-10 minutes until foamy.
  2. Mix the dough: In a large bowl, whisk together flour and salt. Add the yeast mixture and olive oil. Mix until it starts to come together.
  3. Add herbs and knead: Fold in chopped fresh herbs. Knead dough on a floured surface for 8-10 minutes until smooth and elastic.
  4. First rise: Place dough in a lightly oiled bowl, cover, and let rise in a warm spot for about 1 hour until doubled in size.
  5. Shape the bagels: Punch down dough and divide into 8 equal pieces. Roll each into a ball, poke a hole through the center, and stretch to form a 3-inch diameter bagel.
  6. Second rise: Place shaped bagels on parchment-lined baking sheet, cover loosely, and let rise 20-30 minutes until puffy.
  7. Preheat oven to 425Β°F (220Β°C). Bring a large pot of water to a boil and add baking soda.
  8. Boil the bagels: Lower 2-3 bagels at a time into boiling water. Boil 1-2 minutes per side, then remove and drain.
  9. Egg wash and bake: Brush bagels with egg wash. Bake for 18-22 minutes until golden brown and crisp.
  10. Cool and enjoy: Transfer to a cooling rack and let cool slightly before slicing.

Notes

Use bread flour for chewier bagels. For gluten-free, use almond or oat flour blends with xanthan gum but expect different texture. Do not skip boiling step to maintain classic bagel texture. Knead until dough is smooth and elastic but not sticky. Egg wash adds golden color and slight crispness.
