  • 4 slices sharp cheddar cheese
  • Optional: 4 slices American cheese
  • 4 burger buns (brioche or potato buns recommended)
  • Butter, softened (for toasting buns)
  • Leafy lettuce, washed and dried
  • Ripe tomato slices
  • Thinly sliced red onions
  • Pickles (dill or bread-and-butter)
  • Condiments: ketchup, mustard, mayo, or favorite burger sauce

Instructions

  1. Mix the Patties (10 minutes): Place 1 lb ground beef in a mixing bowl. Add 1 tsp kosher salt, Β½ tsp black pepper, 1 tsp garlic powder, 1 tsp onion powder, and 1 tsp Worcestershire sauce (if using). Gently mix with your hands until just combined. Don’t overwork the meat.
  2. Shape the Patties (5 minutes): Divide the beef into 4 equal portions (about 4 oz or 113 g each). Form each into a round patty about ΒΎ inch (2 cm) thick. Press a shallow dimple in the center of each patty with your thumb.
  3. Preheat the Skillet (5 minutes): Heat your cast iron skillet over medium-high heat until very hot (slight wisp of smoke).
  4. Toast the Buns (3 minutes): Spread softened butter on the cut sides of buns. Place butter-side down on a separate pan or edge of skillet and toast until golden brown. Set aside.
  5. Cook the Patties (8-10 minutes): Place patties in hot skillet with space between each. Cook without pressing for 3-4 minutes until crust forms. Flip and cook another 3 minutes. Do not overwork the meat to keep patties tender. Press a dimple in the center of patties to prevent puffing. Use high heat for a good sear but watch carefully to avoid burning.
