  • 6 tbsp unsalted butter, cut into pieces (for caramel)
  • 1/2 cup heavy cream, room temperature (for caramel)
  • 1 tsp flaky sea salt (plus more for sprinkling)
  • 6 cups tart apples, peeled, cored, and sliced (Granny Smith or Honeycrisp)
  • 2/3 cup light brown sugar, packed
  • 2 tbsp all-purpose flour
  • 1 tsp ground cinnamon
  • 1/4 tsp ground nutmeg
  • 1/8 tsp ground cloves (optional)
  • 1/4 tsp fine sea salt
  • 1 tbsp lemon juice

Instructions

  1. In a large bowl, whisk together flour, sugar, and salt for the crust.
  2. Add cold, cubed butter and cut into flour until mixture resembles coarse sand with pea-sized bits.
  3. Drizzle in ice water, one tablespoon at a time, tossing gently until dough just comes together.
  4. Divide dough in half, flatten into disks, wrap in plastic, and chill for at least 30 minutes.
  5. In a clean, dry saucepan, heat granulated sugar over medium heat until melted and amber-colored.
  6. Add butter and whisk until melted. Pour in heavy cream slowly, whisking constantly.
  7. Remove from heat and stir in flaky sea salt. Let cool.
  8. In a large bowl, toss sliced apples with brown sugar, flour, cinnamon, nutmeg, cloves, salt, and lemon juice. Let sit for 10 minutes.
  9. Preheat oven to 400Β°F (200Β°C).
  10. Roll out one disk of dough to a 12-inch circle. Fit into pie dish, trimming excess.
  11. Fill crust with apple mixture, mounding slightly in the center.
  12. Drizzle half the caramel sauce over apples.
  13. Roll out second dough disk and cut into strips for a lattice top. Weave strips over filling, tucking ends under the edge.
  14. Brush lattice and edges with beaten egg, then sprinkle with extra sea salt.
  15. Bake at 400Β°F for 20 minutes. Reduce heat to 350Β°F and bake another 35-40 minutes, until crust is golden and filling is bubbly.
  16. If edges brown too quickly, cover with foil.
