  • 2 boneless, skinless chicken breasts (about 6 ounces each)
  • Salt and freshly ground black pepper, to taste
  • 2 tablespoons olive oil (extra virgin preferred)
  • 4 ounces fresh mozzarella, sliced
  • 1 large ripe tomato, sliced
  • A handful of fresh basil leaves
  • 2 tablespoons balsamic glaze
  • 1/2 teaspoon garlic powder (optional)

Instructions

  1. Pat the chicken breasts dry with paper towels. Season both sides generously with salt, pepper, and garlic powder if using.
  2. Place a large non-stick skillet or cast-iron pan over medium-high heat and add the olive oil. Heat until shimmering but not smoking.
  3. Add the chicken breasts to the hot pan. Cook undisturbed for 5-6 minutes until the bottom is golden brown and releases easily from the pan.
  4. Flip the chicken and cook another 5 minutes.
  5. Quickly layer the mozzarella slices on each breast, then top with tomato slices. Cover the pan with a lid or foil and cook for 2-3 minutes until the cheese melts and the tomato warms through.
  6. Remove the chicken from the pan and place on plates. Scatter fresh basil leaves on top, then drizzle with the balsamic glaze.

Notes

Pound chicken breasts to even thickness for faster, even cooking. Do not overcrowd the pan; cook in batches if needed. Use room temperature chicken for juicier results. If cheese isn’t melting enough, briefly broil for 1-2 minutes watching closely. Drizzle balsamic glaze just before serving to maintain its texture.
