Instructions

  1. In a large mixing bowl, cream together 1 cup (230g) of softened unsalted butter and 1/2 cup (60g) of powdered sugar until smooth and fluffy, about 2-3 minutes.
  2. Add 1 teaspoon of vanilla extract and a pinch of salt. Mix until well combined.
  3. Gradually sift in 2 cups (250g) of all-purpose flour, mixing on low speed until the dough starts to come together. It should be soft but not sticky.
  4. Fold in 1/2 cup (85g) of finely chopped dried sugar plums. Ensure they are evenly distributed throughout the dough.
  5. Shape the dough into a disc, wrap it in plastic wrap, and refrigerate for 30 minutes to chill.
  6. Preheat your oven to 325Β°F (165Β°C) and line baking sheets with parchment paper.
  7. On a lightly floured surface, roll out the dough to about 1/4 inch thickness if using cookie cutters. For rustic rounds, simply scoop out portions and flatten them slightly with your palm.
  8. Place cookies on the prepared baking sheets, leaving about 1 inch between each cookie.
  9. Bake for 12-15 minutes, or until the edges are just starting to turn golden.
  10. Allow cookies to cool on the baking sheets for 5 minutes before transferring them to a wire rack to cool completely.
  11. Optional: Dust with powdered sugar or drizzle with melted white chocolate for extra festive flair.
