Instructions

  1. Preheat the oven to 350Β°F (175Β°C) and line baking sheets with parchment paper.
  2. In a large bowl, whisk together the flour, baking powder, and a pinch of salt.
  3. In another bowl, use an electric mixer to beat the softened butter and both granulated and brown sugar until light and fluffy, about 2-3 minutes.
  4. Beat in the eggs one at a time, followed by the vanilla and almond extracts. Mix until smooth.
  5. Gradually add the dry mixture to the wet mixture, stirring until a soft dough forms. If it’s too sticky, chill it in the fridge for 30 minutes.
  6. Use a cookie scoop or your hands to form dough balls, about 1 tablespoon each. Place them on the prepared baking sheets, leaving enough space for spreading.
  7. Bake for 10-12 minutes, or until the edges are golden brown. The centers should still be soft.
  8. Let the cookies cool on the baking sheets for 5 minutes, then transfer them to a wire rack to cool completely.

Notes
