  • 8 oz (225 g) cream cheese, softened to room temperature
  • 1 cup (240 ml) heavy cream, chilled
  • ½ cup (60 g) powdered sugar, sifted
  • 3 tablespoons (45 ml) Irish whiskey
  • 1 teaspoon vanilla extract
  • About 24 ladyfinger biscuits
  • Unsweetened cocoa powder for dusting

Instructions

  1. Prepare the coffee soak: Brew espresso or strong coffee and let cool to room temperature (about 10 minutes). In a medium bowl, combine coffee, Irish whiskey, and brown sugar. Stir until sugar dissolves. Set aside.
  2. Make the whiskey cream: In a large mixing bowl, beat softened cream cheese until smooth (about 2 minutes). In a separate chilled bowl, whip heavy cream with an electric mixer until soft peaks form (3-4 minutes). Gradually add powdered sugar and beat until stiff peaks form.
  3. Combine cream cheese and whipped cream: Gently fold whipped cream into cream cheese using a spatula, being careful not to deflate. Stir in 3 tablespoons Irish whiskey and vanilla extract until evenly mixed. Cream should be fluffy and smooth.
  4. Assemble the tiramisu: Quickly dip each ladyfinger into coffee soak for 1-2 seconds per side; do not soak too long. Arrange a single layer (about 12 pieces) at the bottom of an 8×8 inch dish. Spread half the whiskey cream evenly over ladyfingers.
  5. Repeat layering: Add another layer of dipped ladyfingers, then spread remaining whiskey cream over the top. Smooth surface with spatula.
  6. Chill and dust: Cover dish with plastic wrap and refrigerate at least 4 hours, preferably overnight. Before serving, sift a generous layer of unsweetened cocoa powder over the top.

Notes

Do not over-soak ladyfingers to avoid sogginess. Use room temperature cream cheese for smooth blending. Chill mixing bowls and beaters for better whipped cream volume. Fold whipped cream gently to keep it airy. Refrigerate tiramisu overnight for best flavor and texture. Dust cocoa powder lightly and evenly.
