  • 1 cup honey (raw or pure)
  • 1/2 cup pineapple juice (fresh or canned)
  • 1/2 cup brown sugar, packed
  • 2 tablespoons Dijon mustard
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground cloves
  • 68 pineapple rings (optional)
  • 8 maraschino cherries (optional)

Instructions

  1. Preheat your oven to 325°F (163°C).
  2. Remove the ham from packaging and discard any plastic disk covering the bone. Pat the ham dry with paper towels.
  3. Score the ham surface in a diamond pattern about 1/8 inch deep.
  4. Place the ham flat side down on a roasting rack in a roasting pan. Tuck pineapple rings into the scored diamonds and secure with toothpicks if using.
  5. In a small saucepan over low heat, combine honey, pineapple juice, brown sugar, Dijon mustard, cinnamon, and cloves. Stir gently until sugar dissolves and glaze is smooth, about 5 minutes.
  6. Brush a generous layer of glaze over the entire ham, working it into the scored cuts.
  7. Roast the ham for about 15 minutes per pound (approximately 2 to 2.5 hours for 8-10 pounds). Baste with glaze every 20-30 minutes.
  8. Use a meat thermometer to check the internal temperature; it should reach 140°F (60°C).
  9. In the last 15 minutes, add maraschino cherries on top of pineapple rings if desired.
  10. Remove the ham from the oven and tent loosely with foil. Let rest for 15-20 minutes.
  11. Carve along the spiral cuts and serve.

Notes

If glaze darkens too fast, loosely cover ham with foil to prevent burning. Resting the ham after roasting keeps it juicy. Apply multiple thin layers of glaze for best caramelization. Use a meat thermometer to avoid overcooking. You can prepare the glaze a day ahead and warm gently before use.
