Instructions

  1. Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper for easy cleanup.
  2. In a mixing bowl, combine panko breadcrumbs, rosemary, thyme, minced garlic, olive oil, salt, pepper, and lemon zest (if using). Mix well to create the herb crust.
  3. Trim excess fat from the rack of lamb, leaving a thin layer for flavor. Pat the lamb dry with a paper towel.
  4. Rub the lamb generously with salt and pepper on all sides.
  5. Spread Dijon mustard evenly over the surface of the lamb.
  6. Press the breadcrumb mixture onto the mustard-coated lamb, ensuring an even layer.
  7. Place the lamb on the prepared baking sheet and roast for 25-30 minutes, or until the internal temperature reaches 130°F (54°C) for medium-rare.
  8. Remove the lamb from the oven and let it rest for 10 minutes to retain juices.
