  • 3 cloves garlic, minced
  • 3 tablespoons extra virgin olive oil
  • 1 tablespoon Dijon mustard
  • 1 teaspoon kosher salt
  • 1/2 teaspoon freshly ground black pepper
  • Optional: pinch of red pepper flakes or smoked paprika

Instructions

  1. Preheat your oven to 400°F (200°C) and allow it to fully heat for at least 15 minutes.
  2. Pat the pork loin dry with paper towels. If not tied, use kitchen twine to tie every 2 inches for even cooking.
  3. In a small bowl, combine olive oil, Dijon mustard, minced garlic, chopped rosemary, thyme, parsley, salt, and pepper to form a thick, spreadable paste.
  4. Rub the herb mixture evenly all over the pork loin, pressing firmly to adhere.
  5. Place the pork on a wire rack set inside a roasting pan or rimmed baking sheet to allow heat circulation.
  6. Roast at 400°F (200°C) for 15 minutes, then reduce oven temperature to 350°F (175°C) and continue roasting until the internal temperature reaches 145°F (63°C), about 30-40 minutes more. Start checking at 30 minutes with a meat thermometer.
  7. Remove the pork from the oven and tent loosely with foil. Let rest for 10-15 minutes to allow juices to redistribute.
  8. Slice into 1/2-inch thick slices against the grain and serve.
