  • A pinch of sea salt
  • About 20 wooden skewers or floral wire
  • Green floral tape (optional)
  • Cellophane or decorative wrapping paper

Instructions

  1. Gently wash the strawberries and pat dry completely with paper towels. Leave the green stems on. Insert a wooden skewer or floral wire through each strawberry from the bottom, leaving enough stem showing to hold.
  2. Set up a double boiler by simmering water in a small saucepan. Place a heatproof bowl over the pan without touching the water. Add the chopped semi-sweet chocolate and stir occasionally until smooth. Remove from heat and stir in vanilla extract and a pinch of sea salt.
  3. Holding the skewer, dip each strawberry into the melted chocolate, swirling to coat evenly. Let the excess drip off, then place the strawberry upright on a parchment-lined baking sheet. Repeat for all berries.
  4. Optional: Melt the white chocolate using the same method. Using a fork or small spoon, drizzle the white chocolate over the dipped strawberries for contrast.
  5. Allow the strawberries to set at room temperature or refrigerate for 15-20 minutes until the chocolate firms up.
  6. Once set, gather the skewers into a tight bunch, arranging the strawberries to resemble rose petals. Wrap the stems with green floral tape starting just below the berries and working downward. If floral tape is unavailable, use ribbon or twine.
  7. Wrap the bouquet in cellophane or decorative paper, securing with a ribbon or bow. Optionally, tuck in a small handwritten note or a sprig of fresh greenery.

Notes

Use gentle heat when melting chocolate to avoid burning or seizing. Ensure strawberries are completely dry before dipping. If chocolate thickens, gently reheat over double boiler. For a glossy finish, temper the chocolate but simple melting works well. Store bouquet refrigerated and consume within 48 hours for best freshness.
