Instructions

  1. Soften unsalted butter at room temperature for about 30 minutes. Preheat oven to 350Β°F (175Β°C). Line two baking sheets with parchment paper or silicone mats.
  2. In a large bowl, cream the softened butter, granulated sugar, and powdered sugar using an electric mixer on medium speed for 3-4 minutes until light, fluffy, and pale.
  3. Add the egg and vanilla extract to the butter mixture and beat until fully incorporated, scraping down the sides as needed.
  4. In a separate bowl, whisk together the all-purpose flour, salt, and baking powder (if using).
  5. Gradually add the dry ingredients to the wet mixture, mixing on low speed or folding gently until a soft, pliable dough forms.
  6. Wrap the dough in plastic wrap and chill in the refrigerator for at least 1 hour.
