  • ½ cup (115g) unsalted butter, softened
  • 3 cups (360g) powdered sugar, sifted
  • 1 teaspoon vanilla extract
  • Pinch of salt

Instructions

  1. Preheat oven to 350°F (175°C). Grease and flour two 9-inch round cake pans or line with parchment paper.
  2. Toast the chopped pecans on a baking sheet in the oven for 5-7 minutes until fragrant. Let cool.
  3. In a large bowl, sift together flour, baking soda, salt, and cinnamon. Whisk to combine.
  4. In a separate bowl, beat sugar and eggs until light and fluffy (3-4 minutes). Slowly add vegetable oil and vanilla extract, mixing until smooth.
  5. Gently fold mashed bananas and drained crushed pineapple into the wet mixture.
  6. Gradually fold dry ingredients into the wet mixture using a spatula until just combined.
  7. Fold in toasted pecans, reserving a few for garnish if desired.
  8. Divide batter evenly between prepared pans, smoothing tops.
  9. Bake for 25-30 minutes or until a toothpick inserted in the center comes out clean or with a few moist crumbs.
  10. Cool cakes in pans for 10 minutes, then transfer to wire racks to cool completely.
  11. For frosting, beat cream cheese and butter until creamy. Gradually add powdered sugar, vanilla extract, and salt. Mix until smooth and fluffy.
  12. Place one cake layer on serving plate. Spread a generous amount of frosting on top, then add second layer.
  13. Cover top and sides with remaining frosting. Sprinkle reserved toasted pecans on top.
  14. Chill for 20 minutes if firmer frosting is desired before slicing.
