  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1 cup (225g) unsalted butter, softened
  • 2 cups (400g) granulated sugar
  • 4 large eggs, room temperature
  • 1/4 cup (60ml) fresh key lime juice
  • 1 tablespoon key lime zest
  • 1 teaspoon vanilla extract
  • 1/2 cup (120ml) whole milk
  • 1 cup (120g) powdered sugar
  • 2 tablespoons (30ml) fresh key lime juice

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a 9×5-inch loaf pan with butter or nonstick spray. Lightly dust with flour.
  2. In a large bowl, whisk together all-purpose flour, baking powder, and salt. Set aside.
  3. Using a stand mixer or hand mixer, beat softened unsalted butter with granulated sugar until light and fluffy, about 3 minutes.
  4. Add eggs one at a time, mixing well after each addition.
  5. Mix in fresh key lime juice, key lime zest, and vanilla extract.
  6. Gradually add the dry mixture to the wet mixture, alternating with whole milk. Begin and end with the dry ingredients. Mix until just combined.
  7. Pour the batter into the prepared loaf pan and smooth the top. Bake for 55-65 minutes or until a toothpick inserted into the center comes out clean.
  8. Let the cake cool in the pan for 10 minutes before transferring it to a cooling rack. Allow it to cool completely before glazing.
  9. In a small bowl, whisk together powdered sugar and fresh key lime juice until smooth.
  10. Drizzle the glaze over the cooled cake and let it set for about 15 minutes before slicing and serving.
