Ingredients

Scale
  • 1 cup sweetened shredded coconut
  • 1 cup granulated sugar
  • 3 large eggs
  • ½ cup unsalted butter, melted
  • 1 tablespoon all-purpose flour
  • ½ cup milk
  • 1 teaspoon vanilla extract
  • 1 unbaked pie crust

Instructions

  1. Preheat your oven to 350°F (175°C). Lightly grease your 9-inch pie dish or spray it with non-stick spray. If you’re using a store-bought pie crust, let it come to room temperature for a few minutes before unrolling it and pressing it into the dish.
  2. In a medium mixing bowl, combine the sugar, eggs, and melted butter. Whisk until the mixture is smooth and slightly frothy.
  3. Add the flour to the mixture and whisk until fully incorporated. Make sure there are no lumps—it should be silky smooth.
  4. Stir in the milk and vanilla extract. The vanilla gives the filling a lovely depth of flavor.
  5. Gently fold in the sweetened shredded coconut. Be sure it’s evenly distributed throughout the batter.
  6. Pour the filling into the prepared pie crust, spreading it out evenly with a spatula. The coconut will naturally rise to the top, creating a slightly golden and crispy layer as it bakes.
  7. Place the pie dish in the preheated oven and bake for 40-45 minutes, or until the top is golden brown and the filling is set. To check, insert a toothpick into the center—it should come out mostly clean, with just a few crumbs.
  8. Once done, remove the pie from the oven and let it cool on a wire rack for at least 30 minutes before slicing.

Notes

[‘Don’t overmix the ingredients to maintain the texture of the filling.’, ‘Cover the edges of the pie crust with aluminum foil or a pie crust shield if they start to brown too quickly.’, ‘Let the pie cool for at least 30 minutes before slicing to allow the filling to set.’, ‘Toast shredded coconut beforehand for deeper flavor and added crunch.’, ‘This pie can be made a day in advance and stored in the fridge for better flavor.’]
