Instructions

  1. Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Wash and dry the red grapes. Toss them in a mixing bowl with 1 tablespoon of olive oil and 1 tablespoon of honey. Spread them out in a single layer on the prepared baking sheet.
  3. Roast the grapes for 15-20 minutes, or until soft and slightly caramelized. Keep an eye on them to avoid shriveling.
  4. Add feta cheese, Greek yogurt, and 2 tablespoons of olive oil to a food processor. Blend until smooth and creamy, scraping down the sides as needed.

  6. Toast the pistachios in a dry skillet over medium heat for 2-3 minutes, stirring frequently. Remove from heat and let cool.
  7. Spread the whipped feta onto a serving plate or shallow bowl, creating a small well in the center. Spoon the roasted grapes over the top, including the juices from the baking sheet.
  8. Sprinkle the toasted pistachios and fresh thyme leaves over the dish. Serve immediately with slices of warm, crusty bread or crackers.
