  • 4 tbsp unsalted butter, divided
  • 1/4 cup all-purpose flour
  • 3 cups whole milk
  • 1 cup heavy cream
  • 2 cups smoked Gouda, shredded
  • 2 cups sharp cheddar cheese, shredded
  • 1 tsp garlic powder
  • 1 tsp ground mustard
  • Salt and pepper to taste
  • 1/2 cup panko breadcrumbs (optional)
  • 2 tbsp olive oil or melted butter (optional, for breadcrumbs)

Instructions

  1. Preheat your oven to 375°F (190°C) if adding a breadcrumb topping.
  2. Cook the pasta in a large pot of salted boiling water according to package instructions, until al dente. Drain and set aside.
  3. In a medium saucepan, melt 3 tablespoons of butter over medium heat. Add the flour and whisk continuously for 1-2 minutes, until a smooth paste forms.
  4. Slowly add the milk and heavy cream, whisking constantly to avoid lumps. Cook for 4-5 minutes, until the mixture thickens and coats the back of a spoon.
  5. Reduce heat to low and add the shredded smoked Gouda and sharp cheddar, one handful at a time, stirring until melted and smooth.
  6. Season the cheese sauce with garlic powder, ground mustard, salt, and pepper. Taste and adjust seasoning as needed.
  7. Combine the cooked pasta with the cheese sauce in a large mixing bowl or directly in the pot. Stir well to ensure every noodle is coated.
  8. If adding a breadcrumb topping, transfer the mac and cheese to a casserole dish. Mix the panko breadcrumbs with olive oil or melted butter, then sprinkle evenly over the top.
  9. Bake for 15-20 minutes, or until the topping is golden and crispy. Serve immediately and enjoy!
