A creamy, tangy, slightly spicy Southern classic that turns any gathering into a celebration. Perfect as a dip, sandwich filling, or topping for burgers and baked potatoes.

Ingredients

Scale
  • 2 cups sharp cheddar cheese, freshly shredded
  • 8 ounces cream cheese, softened
  • 1/2 cup diced jarred pimentos, drained
  • 1/4 cup mayonnaise
  • 1 teaspoon hot sauce
  • 1/2 teaspoon garlic powder
  • Salt and pepper to taste
  • Optional: 1/2 teaspoon smoked paprika
  • Optional: 1 jalapeño, diced
  • Optional: 2 tablespoons green onions, finely chopped
  • Optional: 1 teaspoon Worcestershire sauce

Instructions

  1. Shred the cheddar cheese and soften the cream cheese.
  2. In a medium-sized mixing bowl, combine the softened cream cheese and mayonnaise. Stir until smooth and creamy.
  3. Fold in the shredded cheddar cheese and mix well.
  4. Drain the jar of pimentos and stir them into the mixture.
  5. Add hot sauce, garlic powder, salt, and pepper to taste. Mix in optional ingredients like smoked paprika, jalapeños, green onions, or Worcestershire sauce if desired.
  6. Stir everything until fully combined. For a smoother spread, transfer the mixture to a food processor and pulse until desired texture is achieved.
  7. Cover the bowl and refrigerate for at least 1 hour to allow flavors to meld.
  8. Serve chilled or at room temperature with crackers, fresh veggies, or as a sandwich filling.
