Transform leftover mac and cheese into a gooey, cheesy grilled cheese sandwich that’s the ultimate comfort food mash-up.

  • 1 cup leftover mac and cheese
  • 4 slices bread (sourdough, white, wheat, or brioche)
  • 4 slices cheddar, American, or melting cheese
  • 2 tablespoons butter, softened
  • Optional add-ins: cooked bacon, jalapeΓ±os, or spinach

Instructions

  1. Prep your ingredients. Microwave leftover mac and cheese for 30 seconds to loosen it up if needed.
  2. Butter one side of each slice of bread evenly.
  3. Heat a nonstick skillet over medium heat for 1-2 minutes.
  4. Place a slice of bread butter-side down onto the skillet. Add a slice of cheese on top.
  5. Spoon a generous layer of mac and cheese onto the bread, spreading evenly without reaching the edges.
  6. Add optional add-ins like bacon or spinach on top of the mac and cheese.
  7. Place another slice of cheese on top of the mac and cheese.
  8. Top with the second slice of bread, butter-side up.
  9. Cook the sandwich for 3-4 minutes on the first side, pressing lightly with a spatula.
  10. Flip the sandwich carefully and cook for another 3-4 minutes until golden brown and cheese has melted.
  11. Remove the sandwich from the skillet and let it rest for a minute before slicing.
  12. Slice in half and serve warm.
