  • 2 sprigs fresh rosemary
  • 2 shallots, finely chopped
  • 2 tablespoons butter

Instructions

  1. Preheat your oven to 300°F (150°C).
  2. In a mixing bowl, combine ground coffee, brown sugar, paprika, garlic powder, onion powder, cayenne pepper (if using), salt, and black pepper.
  3. Rub the brisket with olive oil, then generously coat it with the coffee mixture, ensuring all sides are well-covered.
  4. Place the brisket in a roasting pan and cover tightly with aluminum foil.
  5. Roast the brisket for 3-4 hours or until it reaches an internal temperature of 200°F (93°C). Check periodically after 3 hours.
  6. While the brisket is roasting, prepare the red wine jus. Heat a skillet over medium heat and melt butter.
  7. Add shallots and sauté until softened, about 2 minutes.
  8. Pour in the red wine and beef broth, then add the thyme and rosemary. Bring the mixture to a simmer.
  9. Let the jus reduce by half, stirring occasionally, about 10-15 minutes.
  10. Once the brisket is done, let it rest for 20 minutes before slicing.
  11. Strain the jus into a serving bowl and drizzle it over the sliced brisket.
