  • 2 large or 3 medium-sized sweet potatoes, peeled and diced into 1-inch cubes
  • 2 tablespoons olive oil
  • 1 teaspoon ground cinnamon
  • 2 tablespoons honey (or maple syrup as a substitute)
  • Β½ teaspoon salt
  • Pinch of black pepper (optional)
  • Fresh parsley, chopped (optional)

Instructions

  1. Preheat the oven to 400Β°F (200Β°C). Line a baking sheet with parchment paper for easy cleanup.
  2. Peel the sweet potatoes and dice them into 1-inch cubes. Place them in a large mixing bowl.
  3. Add 2 tablespoons of olive oil, 1 teaspoon of cinnamon, and Β½ teaspoon of salt to the bowl. Toss until the sweet potatoes are evenly coated.
  4. Arrange the seasoned sweet potatoes in a single layer on the prepared baking sheet, ensuring enough space between the pieces for even roasting.
  5. Place the baking sheet in the preheated oven and roast the sweet potatoes for 20 minutes.
  6. Remove the baking sheet from the oven and carefully flip the sweet potatoes using a spatula. Drizzle 2 tablespoons of honey evenly over the top. Return the baking sheet to the oven.
  7. Continue to roast for another 15-20 minutes, or until the sweet potatoes are tender and caramelized with crispy edges.
  8. Remove from the oven, garnish with a sprinkle of fresh parsley if desired, and serve warm.
