  • 1 cup (240g) canned pumpkin puree
  • ¾ cup (150g) granulated sugar
  • ½ cup (100g) brown sugar
  • ½ cup (120ml) vegetable oil
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup (175g) semi-sweet chocolate chips

Instructions

  1. Preheat your oven to 350°F (175°C) and line your loaf pan with parchment paper, leaving a bit of overhang for easy removal.
  2. In a medium mixing bowl, whisk together all-purpose flour, baking soda, ground cinnamon, ground nutmeg, ground ginger, and salt. Set aside.
  3. In a large mixing bowl, combine canned pumpkin puree, granulated sugar, brown sugar, vegetable oil, eggs, and vanilla extract. Whisk until smooth.
  4. Gradually add the dry ingredients to the wet ingredients, gently folding with a spatula until just combined. Be careful not to overmix.
  5. Fold in semi-sweet chocolate chips until evenly distributed through the batter.
  6. Pour the batter into the prepared loaf pan and smooth the top with your spatula.
