Instructions

  1. Preheat your oven to 350°F (175°C). Line two baking sheets with parchment paper or silicone mats.
  2. In a large bowl, cream together 1 cup softened unsalted butter, 1 cup light brown sugar, and 1/4 cup granulated sugar until light and fluffy, about 3-4 minutes.
  3. Beat in 2 large eggs one at a time, mixing well after each addition. Stir in 2 teaspoons vanilla extract.
  4. In a separate bowl, whisk together 2 1/4 cups all-purpose flour, 2 teaspoons cornstarch, 1 teaspoon baking soda, and 1/2 teaspoon salt.
  5. Gradually add the dry ingredients to the wet batter, mixing on low speed or folding by hand until just combined.
  6. Fold in 1 1/2 cups semi-sweet chocolate chips gently.
  7. Cover the dough with plastic wrap and refrigerate for at least 30 minutes.
  8. On a lightly floured surface, roll out chilled dough to about 1/2-inch thickness. Use a heart-shaped cookie cutter to cut out cookies and transfer them to the prepared baking sheets. Optionally, sprinkle edges with colored sanding sugar.
  9. Bake for 9-11 minutes until edges are set but centers are still soft.
  10. Let cookies rest on the baking sheets for 5 minutes before transferring to a wire rack to cool completely.
