Ingredients

Scale
  • 2 large apples, peeled and diced (Granny Smith or Honeycrisp)
  • 2 tablespoons granulated sugar
  • 1 teaspoon ground cinnamon
  • 1 teaspoon lemon juice
  • 1/2 cup unsalted butter, softened
  • 3/4 cup granulated sugar
  • 2 large eggs, room temperature
  • 1 teaspoon vanilla extract
  • 1/2 cup whole milk (or almond milk for dairy-free)
  • 1 3/4 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1 cup powdered sugar
  • 23 tablespoons milk
  • 1/2 teaspoon vanilla extract

Instructions

  1. Prepare the Apple Mixture: In a small bowl, toss the diced apples with granulated sugar, cinnamon, and lemon juice. Set aside.
  2. Preheat the Oven: Preheat your oven to 350Β°F (175Β°C). Grease and line your loaf pan with parchment paper.
  3. Make the Batter: In a large mixing bowl, cream the softened butter and sugar together until light and fluffy, about 2 minutes. Add the eggs one at a time, beating well after each addition. Mix in the vanilla extract.
  4. Combine Dry Ingredients: In a separate bowl, whisk together the flour, baking powder, salt, and cinnamon. Gradually add the dry ingredients to the wet mixture, alternating with the milk, starting and ending with the dry ingredients. Mix until just combined.
  5. Layer the Bread: Pour half of the batter into the prepared loaf pan. Spread half of the apple mixture evenly over the batter. Add the remaining batter and top with the rest of the apple mixture. Use a knife to gently swirl the apples into the batter.
  6. Bake: Bake for 50-60 minutes, or until a toothpick inserted into the center comes out clean. If the top starts to brown too quickly, cover it loosely with aluminum foil.
  7. Cool: Let the bread cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.
  8. Make the Glaze: In a small bowl, whisk together powdered sugar, milk, and vanilla extract until smooth. Adjust the consistency as needed.
  9. Drizzle and Serve: Once the bread is completely cool, drizzle the glaze over the top. Slice, serve, and enjoy!
