  • 1 cup Medjool dates, pitted and softened
  • 1 cup almonds, raw or roasted, finely ground
  • 1/2 cup unsweetened cocoa powder
  • 1/2 cup dark chocolate chips (at least 70% cacao)
  • 2 tablespoons pure maple syrup
  • 1 teaspoon vanilla extract
  • Pinch of sea salt
  • 1 teaspoon coconut oil

Instructions

  1. Pit the dates if they aren’t already, and soak them in warm water for 10 minutes to soften. Drain well.
  2. Add the dates and almonds to your food processor. Pulse until they form a sticky, crumbly mixture. Scrape down the sides as needed.
  3. Add the unsweetened cocoa powder and blend until well combined. The mixture should be dark and smell like rich chocolate.
  4. Add the dark chocolate chips, maple syrup, vanilla extract, and a pinch of sea salt. Pulse again until everything is evenly mixed.
  5. Check the consistency. The mixture should stick together when pressed. If it’s too crumbly, add a teaspoon of coconut oil and pulse again.
  6. Line your 8×8-inch pan with parchment paper to prevent sticking.
  7. Transfer the brownie mixture to the pan. Use a spatula or your hands to press it down firmly and evenly.
  8. Sprinkle your choice of toppings, like chopped nuts, shredded coconut, or flaky sea salt.
  9. Place the pan in the refrigerator for at least 2 hours to set. If you’re in a hurry, you can pop it in the freezer for 30 minutes.
  10. Remove the brownies from the pan using the parchment paper. Cut into squares or rectangles and enjoy!
