Ingredients

Scale
  • 1 lb ground beef (85% lean recommended)
  • 1 small onion, finely diced
  • 2 cloves garlic, minced
  • 2 tbsp tomato paste
  • 1/2 cup water or beef broth
  • 2 tsp chili powder
  • 1 1/2 tsp ground cumin
  • 1 tsp smoked paprika (or regular paprika)
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/2 tsp dried oregano
  • 1/4 tsp crushed red pepper flakes (optional)
  • 1/2 tsp salt (or to taste)
  • 1/4 tsp black pepper
  • 1/2 tsp brown sugar
  • 8 small flour or corn tortillas
  • Shredded lettuce
  • Chopped tomatoes
  • Diced red onion or scallions
  • Grated cheddar or Monterey Jack cheese
  • Sour cream or Greek yogurt
  • Fresh cilantro leaves
  • Sliced jalapeΓ±os
  • Avocado or guacamole
  • Lime wedges

Instructions

  1. In a small bowl, mix together chili powder, cumin, smoked paprika, garlic powder, onion powder, oregano, crushed red pepper flakes, salt, black pepper, and brown sugar. Set aside.
  2. Dice the onion and mince the garlic. Chop any toppings you plan to use.
  3. Place a large skillet over medium-high heat and add the ground beef. Break it up with a spoon and cook for about 2-3 minutes until it starts to brown.
  4. Add the diced onion and cook for another 3-4 minutes, stirring often, until the beef is no longer pink and the onion is soft. Drain excess fat if needed.
  5. Stir in the minced garlic and cook until fragrant, about 30 seconds.
  6. Sprinkle the homemade taco seasoning over the beef, followed by the tomato paste. Mix well to coat the meat.
  7. Pour in 1/2 cup water or beef broth. Stir and let the mixture simmer for 5-7 minutes, uncovered, until the liquid reduces and the beef is saucy but not soupy.
  8. While the beef simmers, heat tortillas in a dry skillet for 30 seconds per side, or microwave wrapped in a damp towel for 1 minute.
  9. Spoon the beef filling into each tortilla. Top with lettuce, tomatoes, cheese, and other desired toppings. Squeeze lime juice on top.
  10. Arrange tacos on a platter and serve immediately.

Notes

For gluten-free tacos, use corn tortillas. For dairy-free, skip cheese and sour cream. Make extra seasoning and store for future use. Prep toppings while beef simmers to save time. If doubling the recipe, use two pans to avoid overcrowding. Leftover taco meat tastes even better the next day and can be frozen for up to 2 months.
