Garlic butter roasted mushrooms are a simple yet indulgent side dish, packed with rich, garlicky flavor and tender, juicy mushrooms with crispy edges.

Ingredients

Scale
  • 1 pound button or cremini mushrooms, cleaned and trimmed
  • 4 tablespoons unsalted butter, melted
  • 2 tablespoons olive oil
  • 3 garlic cloves, minced
  • 1 teaspoon salt
  • 1/2 teaspoon freshly cracked black pepper
  • 2 tablespoons fresh parsley, chopped
  • Optional: 1 squeeze of fresh lemon juice

Instructions

  1. Preheat the oven to 400Β°F (200Β°C) and line a large baking sheet with parchment paper.
  2. Clean the mushrooms by gently wiping them with a damp paper towel to remove dirt. Trim the stems if needed and set them aside.
  3. In a mixing bowl, combine melted butter, olive oil, minced garlic, salt, and black pepper. Stir until well combined.
  4. Add the cleaned mushrooms to the bowl and toss them well to ensure each one is coated evenly with the garlic butter mixture.
  5. Arrange the mushrooms in a single layer on the prepared baking sheet, ensuring they are not overlapping.
  6. Roast the mushrooms in the preheated oven for 20-25 minutes, flipping them halfway through. They should be golden brown and slightly crispy on the edges when done.
  7. Once out of the oven, sprinkle the roasted mushrooms with freshly chopped parsley and a squeeze of lemon juice if desired. Serve immediately.

Notes

Ensure mushrooms are spread in a single layer to roast evenly. For a dairy-free option, substitute butter with vegan butter or extra olive oil. Experiment with herbs or spices for added flavor.
