A refreshing summer salad combining juicy watermelon cubes, salty feta cheese, and bright mint leaves, tossed gently with olive oil and lime juice for a perfect balance of flavors.

  • 4 cups (600g) seedless watermelon, cut into 1-inch cubes
  • 1 cup (150g) crumbled feta cheese
  • 1/4 cup (about 15g) fresh mint leaves, roughly chopped
  • 1 tablespoon extra virgin olive oil
  • 1 tablespoon fresh lime juice (about half a lime)
  • Pinch of sea salt
  • Freshly ground black pepper (optional)

Instructions

  1. Slice off the rind and cut the watermelon into 1-inch cubes, aiming for uniform pieces.
  2. Remove mint leaves from stems and roughly chop.
  3. In a large mixing bowl, gently toss watermelon cubes with crumbled feta and chopped mint, being careful to keep watermelon intact and feta crumbly.
  4. Drizzle extra virgin olive oil and squeeze fresh lime juice over the salad. Sprinkle sea salt and optional black pepper. Toss lightly to coat evenly.
  5. Let the salad sit for about 5 minutes at room temperature to allow flavors to mingle, then transfer to a serving bowl or platter.

Notes

Gently toss ingredients to keep watermelon cubes intact and feta crumbly. Drain excess watermelon juice if very juicy to prevent sogginess. Serve shortly after preparation for best texture and flavor. Use fresh mint for best taste. For dairy-free version, substitute feta with marinated tofu.
