  • 4 cups fresh arugula
  • 2 ripe pears, thinly sliced
  • 1/2 cup crumbled goat cheese
  • 1/4 cup chopped walnuts, toasted
  • 1/4 cup thinly sliced red onion
  • 1/4 cup olive oil
  • 2 tablespoons honey
  • 1 tablespoon lemon juice
  • 1 teaspoon Dijon mustard
  • Salt and pepper to taste

Instructions

  1. Wash and dry the arugula thoroughly and set it aside in a large salad bowl.
  2. Slice the pears thinly. Toss them in a little lemon juice if prepping ahead to prevent browning.
  3. Thinly slice the red onion and add it to the arugula.
  4. Toast the walnuts in a non-stick skillet over medium heat for 3-4 minutes, stirring frequently to prevent burning. Remove from heat and let cool.
  5. Combine olive oil, honey, lemon juice, Dijon mustard, and a pinch of salt and pepper in a small bowl. Whisk until smooth and emulsified to make the honey vinaigrette.
  6. Drizzle the honey vinaigrette over the arugula and toss gently to coat the leaves evenly.
  7. Add the sliced pears, toasted walnuts, and crumbled goat cheese on top. Toss gently to combine.
  8. Taste and adjust seasoning if needed. Add extra salt or lemon juice for more flavor.
  9. Serve immediately for the freshest taste and texture.
