  • 2 ripe mangoes, peeled and diced (about 2 cups / 300 grams)
  • ¼ cup fresh cilantro, chopped (about 15 grams)
  • 2 tablespoons fresh lime juice (about 30 ml)
  • 1 small jalapeño pepper, seeded and finely chopped
  • ¼ cup red onion, finely diced (about 40 grams)
  • ¼ teaspoon salt (optional)

Instructions

  1. Peel 2 ripe mangoes and dice into small, even ½-inch cubes (about 2 cups).
  2. Roughly chop ¼ cup fresh cilantro leaves and thin stems.
  3. Finely dice ¼ cup red onion; soak in cold water for 5 minutes if desired to soften bite.
  4. Cut 1 small jalapeño in half, remove seeds if less heat is desired, and finely mince.
  5. Juice 2 fresh limes to get about 2 tablespoons of juice, straining out seeds.
  6. In a mixing bowl, gently combine diced mango, chopped cilantro, red onion, jalapeño, and lime juice. Add a pinch of salt if using.
  7. Taste and adjust by adding more lime juice or jalapeño as desired.
  8. Refrigerate salsa for at least 15 minutes before serving to let flavors meld.
