Instructions

  1. Cut cabbage into quarters and remove the tough core. Shred green and red cabbage finely into thin strips about 1/8 inch thick.
  2. Shred carrots using a box grater or food processor to yield about 1 cup.
  3. Finely slice 1/4 cup red onion if using, and chop 2 tablespoons fresh parsley.
  4. In a large mixing bowl, combine shredded green cabbage, red cabbage, carrots, onion, and parsley. Toss gently to mix evenly.
  5. In a small bowl, whisk together apple cider vinegar, olive oil, honey, Dijon mustard, salt, and black pepper until smooth and slightly thickened.
  6. Pour the dressing over the shredded vegetables and toss thoroughly so every shred is coated.
  7. Cover the bowl and refrigerate for at least 30 minutes to allow flavors to meld and cabbage to soften slightly while retaining crunch.
  8. Before serving, stir the coleslaw again and adjust seasoning with salt or honey if needed.
