A quick and easy breakfast recipe featuring creamy avocado spread on toasted bread topped with a mix of crunchy seeds and nuts, brightened with lemon juice and optional chili flakes.

  • 1 tablespoon olive oil or butter (for toasting)
  • 2 ripe avocados, peeled and pitted
  • 1 tablespoon fresh lemon juice
  • Salt and freshly ground black pepper, to taste
  • 1 small garlic clove, minced (optional)
  • 2 tablespoons sunflower seeds, toasted
  • 2 tablespoons pumpkin seeds, toasted
  • 1 tablespoon chopped walnuts or almonds (optional)
  • 1 teaspoon red chili flakes (optional)
  • 1 teaspoon sesame seeds
  • Fresh herbs like cilantro or parsley, chopped (optional)
  • Extra lemon wedges, for serving

Instructions

  1. Brush each slice of bread lightly with olive oil or butter on both sides.
  2. Heat a skillet over medium heat and toast the bread slices until golden and crisp, about 2-3 minutes per side. Alternatively, use a toaster or oven broiler but watch closely to prevent burning.
  3. In a dry skillet over medium heat, toast sunflower seeds, pumpkin seeds, chopped walnuts or almonds, and sesame seeds. Stir frequently to prevent burning. When they start to pop and smell nutty, remove from heat and set aside.
  4. In a mixing bowl, scoop out the avocado flesh. Add fresh lemon juice, salt, pepper, and minced garlic if using. Mash with a fork or potato masher to your preferred consistency.
  5. Spread a generous layer of the avocado mixture onto each toasted bread slice.
  6. Sprinkle the toasted seeds, nuts, and chili flakes evenly over the top.
  7. Finish with a scattering of chopped fresh herbs and an extra squeeze of lemon if desired.
  8. Serve immediately while the toast is still crisp and the avocado is fresh and creamy.
