  • Juice of 1 lime

  • Freshly ground black pepper, to taste
  • Optional: pinch of smoked paprika or chili flakes
  • 1 cup cherry tomatoes, halved (grape tomatoes work too)
  • 68 thinly sliced radishes
  • 1/2 cup fresh cilantro or parsley leaves, roughly chopped
  • 1/2 cup crumbled feta cheese
  • 1/4 cup toasted pumpkin seeds
  • 1/4 cup pickled red onions (optional)
  • 1 cup microgreens or baby arugula
  • Drizzle of honey or balsamic glaze

Instructions

  1. Preheat grill pan or toaster. Brush each slice of sourdough lightly with olive oil on both sides.
  2. Toast the bread until golden brown and crisp, about 3-4 minutes per side on a grill pan or 5-6 minutes in a toaster oven.
  3. Sprinkle a pinch of sea salt over the hot toast right after toasting. Set aside on a serving platter.
  4. In a mixing bowl, mash the peeled avocados with a fork until creamy but still slightly chunky.
  5. Add lime juice, sea salt, black pepper, and optional smoked paprika or chili flakes. Stir gently to combine and adjust seasoning as needed.
  6. Slice cherry tomatoes in halves, radishes thinly, chop herbs roughly, and crumble feta cheese.
  7. Toast pumpkin seeds in a dry skillet over medium heat for 2-3 minutes until fragrant and slightly browned.
  8. Drain pickled onions if using. Arrange each topping in small bowls or on a large platter for easy access.
  9. Spread a generous layer of avocado mixture on each slice of toast.
  10. Let everyone customize with their favorite toppings, layering tomatoes or radishes first, then herbs and feta, pumpkin seeds, and finish with a drizzle of honey or balsamic glaze if desired.
