Instructions

  1. Cube 1 pound of day-old brioche or challah into 1-inch pieces. If bread is fresh, let it sit out for a few hours or dry in a low oven (300°F for 10 minutes).
  2. Lightly butter or spray a 9×13-inch baking dish. Layer bread cubes evenly in the pan.
  3. In a large bowl, whisk together eggs, milk, heavy cream, granulated sugar, vanilla, cinnamon, and salt until smooth and slightly frothy (about 2 minutes).
  4. Pour custard evenly over bread cubes. Gently press down with a spatula so every piece gets soaked. Let sit for 10-15 minutes, or cover and chill overnight.
  5. In a medium bowl, mix brown sugar, melted butter, flour, cinnamon, pinch of salt, and optional nuts until crumbly.
  6. Sprinkle cinnamon streusel evenly over soaked bread.
  7. Preheat oven to 350°F. Bake uncovered for 45-55 minutes, until golden brown and a knife inserted in the center comes out clean. If top browns too quickly, cover loosely with foil after 30 minutes.
