  • 4 large eggs, room temperature
  • 1 cup (240 ml) whole milk or 2% milk
  • 2 teaspoons vanilla extract
  • 1 teaspoon ground cinnamon
  • 2 tablespoons granulated sugar or maple syrup
  • ½ cup (120 g) mascarpone cheese, softened
  • 1 cup (150 g) fresh strawberries, sliced
  • 2 tablespoons unsalted butter
  • Powdered sugar, for dusting (optional)
  • 1 teaspoon freshly squeezed lemon juice

Instructions

  1. In a large mixing bowl, whisk together eggs, milk, vanilla extract, cinnamon, and sugar or maple syrup until fully combined and slightly frothy.
  2. In a small bowl, gently stir mascarpone with lemon juice until creamy and smooth. Chill in the fridge until ready to use.
  3. Wash, hull, and slice strawberries. Toss lightly with a pinch of sugar or honey if desired and set aside.
  4. Heat butter over medium heat in a skillet. Dip each bread slice into the egg batter, soaking both sides for about 10 seconds without getting soggy.
  5. Place soaked bread slices in the hot skillet and cook for 3-4 minutes per side until golden brown and slightly puffed.
  6. Transfer cooked slices to a baking sheet and keep warm in an oven set to 200°F (90°C) while cooking the rest.
  7. To serve, arrange French toast on plates, spoon mascarpone cream over each slice, top with macerated strawberries, and dust with powdered sugar if desired.

Notes
