  • 4 whole turkey legs, skin-on
  • 23 cups olive oil
  • 68 cloves garlic, peeled and slightly crushed
  • 23 sprigs rosemary
  • 23 sprigs thyme
  • 23 sprigs sage
  • 23 bay leaves
  • 2 tablespoons kosher salt
  • 1 tablespoon freshly ground black pepper
  • Zest from 1 lemon
  • Optional: A pinch of smoked paprika

Instructions

  1. Pat the turkey legs dry with paper towels, then rub them generously with kosher salt and freshly ground black pepper. Let them sit for 30 minutes to absorb the seasoning.
  2. Preheat the oven to 250°F (120°C).
  3. Place the turkey legs in a pot, skin-side down. Scatter the garlic cloves, herbs, bay leaves, and lemon zest over the turkey legs.
  4. Pour olive oil into the pot until the turkey legs are fully submerged. Ensure the oil temperature doesn’t exceed 200°F (93°C).
  5. Cover the pot with a lid or aluminum foil and transfer it to the oven. Cook for 3-4 hours, or until the turkey is incredibly tender and the meat pulls away from the bone easily.
  6. Remove the pot from the oven and let the turkey cool in the oil. Once cool, transfer the turkey and the oil into airtight containers to store in the fridge for up to 2 weeks.
  7. When ready to eat, remove the turkey from the oil and crisp up the skin in a hot skillet or under the broiler for a few minutes. Serve warm with your favorite sides.
