  • 2 sweet potatoes, peeled and chopped into bite-sized cubes
  • 4 carrots, peeled and sliced into thick rounds
  • 2 parsnips, peeled and cut into similar-sized pieces as the carrots
  • 1 red onion, cut into wedges
  • 3 tablespoons olive oil
  • 1 tablespoon honey
  • 2 cloves garlic, minced or thinly sliced
  • 2 sprigs fresh rosemary, leaves stripped
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 400Β°F (200Β°C) and line your baking sheet with parchment paper for easy cleanup.
  2. Peel and chop your sweet potatoes, carrots, and parsnips into even-sized chunks. Cut the red onion into wedges.
  3. Place the chopped vegetables in a large mixing bowl. Drizzle with 3 tablespoons of olive oil and 1 tablespoon of honey. Add 2 cloves of minced garlic and toss until everything is well-coated.
  4. Sprinkle with salt and freshly cracked black pepper to taste. Strip the leaves from 2 sprigs of rosemary and toss them in.
  5. Arrange the vegetables in a single layer on the prepared baking sheet to ensure even roasting.
  6. Place the baking sheet in the oven and roast for 25-30 minutes. Halfway through, use a spatula to flip the vegetables for even browning.
  7. Check for doneness. The vegetables should be golden brown on the edges and tender when pierced with a fork. If needed, roast for an additional 5-10 minutes.
  8. Transfer the roasted vegetables to a serving dish and garnish with a few fresh rosemary sprigs if desired.
